Oaty Banana Pancakes

 

Half a large cup of oats or use ground almonds for more protein
1 small ripe banana
2 eggs
100ml almond or other plant based milk


Method

1. Put the oats in a Nutri Bullet (or similar) and whizz into ‘oat flour’
2. Add the banana, eggs and milk 
3. Whizz the whole lot up until thick batter. If you want a thinner consistency add more milk
4. Heat a frying pan with a little butter or coconut oil
5. Drop small batches (almost drop-scone sizes) into the pan and once they start to bubble and then flip over and cook until lightly browned

Serve with natural yogurt, berries and cinnamon
